The dough takes about 2 minutes to mix up, and these are the most peanut-buttery peanut butter cookie you can find.
When I wanted to make Fluffernutter Cookie Sandwiches, I knew what peanut butter cookie recipe I was going to use. It’s a no-brainer. I mixed up the standard cookie recipe, but doubled it. This recipes makes 18 large cookie sandwiches. I slathered one bottom of a cookie with a heaping tablespoonful of peanut butter, and covered the bottom of a second cookie with marshmallow cream frosting. Put them together, and you’ve got super delicious marshmallow and peanut butter Fluffernutter Cookie Sandwiches. I love anything fluffernutter.
Fluffernutter Cookie Sandwiches Recipe

Ingredients
For the Cookies:
2 cups Creamy Peanut Butter
2 cups Granulated Sugar, Plus 2 tablespoons, divided
2 Eggs
For the Filling:
2 7 ounce jars Marshmallow Fluff
1 1/2-2 cups Powdered Sugar
1 cup Creamy Peanut Butter
Directions
Preheat oven to 350°F.
In a large bowl, combine 2 cup creamy peanut butter, 2 cup sugar, and eggs.
Drop by tablespoonful onto well-greased baking sheets.
Sprinkle with remaining sugar, and lightly press a criss-cross pattern with a fork.
Bake for 8-10 minutes, or until edges are golden brown, and centers are set.
Allow to cool on baking sheets for 1-2 minutes before transferring to a wire rack to cool completely.
